1 lb ground chicken

1 cup fresh spinach, chopped

1 cup white cheddar cheese, shredded

1 small onion, finely diced

2 cloves garlic, minced

1/2 cup breadcrumbs

1 large egg

1 teaspoon Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

Olive oil, for cooking

Burger buns

Lettuce, for serving

Tomato slices, for serving

Optional: Your choice of sauce (like mayo or aioli)

Instructions
 

In a large mixing bowl, combine ground chicken, chopped spinach, shredded white cheddar, diced onion, minced garlic, breadcrumbs, egg, Dijon mustard, salt, pepper, and paprika. Mix until all ingredients are well incorporated.

    Divide the mixture into four equal portions and shape them into patties, about 1 inch thick.

      Heat a skillet or grill over medium heat and add a drizzle of olive oil.

        Place the chicken patties on the skillet or grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the burgers are golden brown.

          During the last couple of minutes of cooking, you can place a slice of white cheddar on each burger and cover the pan to melt the cheese.

            Once cooked, remove the patties from the skillet and let them rest for a few minutes.

              Assemble the burgers by placing the cooked chicken patty on a burger bun, top with lettuce, tomato slices, and your choice of sauce.
