Veggie Frittata with Bell Peppers, Onions, and Mushrooms

6 large eggs

1/4 cup milk (dairy or plant-based)

1 cup bell peppers, diced (any color)

1 small onion, diced

1 cup mushrooms, sliced (button or cremini)

1 cup fresh spinach, chopped

1/2 cup shredded cheese (cheddar, mozzarella, or a mix)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh herbs (basil or parsley), for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the bell peppers and mushrooms, cooking for another 5-7 minutes until they're tender. Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

      Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper until well combined. Stir in half of the shredded cheese.

        Combine: Pour the egg mixture over the sautéed vegetables in the skillet, spreading it evenly. Sprinkle the remaining cheese on top.

          Cook the Frittata: Let the frittata cook on the stove for about 3-4 minutes on medium-low, allowing the edges to set.

            Bake in the Oven: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and the center is set. You can test it by inserting a knife into the center – it should come out clean.

              Cool and Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped herbs before slicing.
