Ingredients
  

2 cups mixed leafy greens (spinach, arugula, kale)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, chopped

1 avocado, diced

1 cup cooked quinoa (cooled)

1/2 cup black beans, rinsed and drained

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lemon

2 tablespoons olive oil

1 teaspoon cumin

Salt and pepper, to taste

Optional toppings: sunflower seeds or pumpkin seeds for crunch

Instructions
 

In a large bowl, combine the mixed leafy greens, cherry tomatoes, cucumber, red bell pepper, and cooked quinoa. Toss lightly to mix the ingredients evenly.

    Add the black beans, avocado, red onion, and cilantro to the bowl. Gently toss to ensure the avocado remains intact while blending the flavors.
