Ingredients

1 lb ground beef

1 lb ground pork

1 cup mashed potatoes (prepared and cooled)

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup chopped green onions

1/2 cup breadcrumbs

1/4 cup milk

1 large egg

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup BBQ sauce (for topping)

Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the ground beef and ground pork, ensuring they are well-mixed.

Add the prepared mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, breadcrumbs, milk, egg, minced garlic, Worcestershire sauce, onion powder, garlic powder, salt, and pepper to the meat mixture.

Gently mix the ingredients until just combined—be careful not to overmix, which can lead to a dense meatloaf.

Transfer the mixture to a lightly greased loaf pan or shape it into a loaf on a lined baking sheet.

Brush the top of the meatloaf with BBQ sauce for added flavor and a glossy finish.

Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).

Once baked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute, ensuring a moist meatloaf.

Serve hot, garnished with additional chopped green onions if desired, and enjoy your ultimate loaded potato meatloaf!
