Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1 cup buttermilk (or milk + 1 tbsp vinegar)

2 tablespoons vegetable oil (or melted butter)

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or milk chocolate)

Optional toppings: whipped cream, fresh berries, maple syrup, or extra chocolate chips

Instructions

Mix dry ingredients: In a large mixing bowl, sift together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

Prepare wet ingredients: In a separate bowl, whisk together the egg, buttermilk, vegetable oil, and vanilla extract until smooth.

Combine mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined; it's okay if there are a few lumps. Be careful not to overmix.

Add chocolate chips: Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.

Heat the skillet: Preheat a non-stick skillet or griddle over medium-low heat. If needed, lightly grease the surface with cooking spray or a little butter.

Cook the pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes, or until it is cooked through and a little springy to the touch.

Repeat: Continue this process with the remaining batter, adjusting the heat as necessary to avoid burning.

Serve: Stack the pancakes high on a serving plate and top with your choice of whipped cream, fresh berries, maple syrup, or extra chocolate chips.

Prep Time: 10 minutes | Total Time: 25 minutes | Servings: 4-6 pancakes (depending on size)
