Ingredients
  

2 cups cooked chicken breast, chopped

1 can (15 oz) black beans, drained and rinsed

1 cup corn, frozen or canned (drained)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup red onion, finely chopped

1/2 cup fresh cilantro, chopped

1/2 cup shredded cheddar cheese

1 lime, juiced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

Tortilla chips, for serving

Instructions
 

In a large mixing bowl, combine the chopped chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro.

    In a separate bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper until well combined.

      Pour the dressing over the salad mixture and toss gently to combine, ensuring that all ingredients are well coated.

        Sprinkle the shredded cheddar cheese over the top of the salad and toss lightly again.

          Serve immediately, or chill in the refrigerator for 30 minutes to allow flavors to meld together.

            Just before serving, crush a handful of tortilla chips on top for added crunch and texture.
