4 cups all-purpose flour

1/4 cup granulated sugar

2 tablespoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 cup unsalted butter, cold and cubed

3/4 cup milk

2 large eggs

1 teaspoon vanilla extract

1/2 cup raisins (or currants)

1/2 cup chopped walnuts (optional)

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, and ginger until well combined.

      Cut in Butter: Add the cubed butter into the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Combine Wet Ingredients: In a separate bowl, beat together the milk, eggs, vanilla extract, and lemon zest until well combined.

          Mix Everything Together: Pour the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to overmix. Fold in the raisins and walnuts if using.
