Ingredients

4 slices of whole-grain bread

1/2 cup tahini

1 tablespoon honey or maple syrup (for a vegan option)

Juice and zest of 1 lemon

1 teaspoon ground cumin

1/4 teaspoon cayenne pepper (optional, for some heat)

Salt and pepper to taste

1 small cucumber, thinly sliced

1/4 cup pomegranate seeds

Fresh parsley or mint leaves for garnish

Olive oil for drizzling

Instructions

Prepare the Toasts:

    - Toast the slices of whole-grain bread until golden and crispy. You can use a toaster or an oven set to a high broil.

      Make the Tahini Spread:

        - In a small bowl, combine the tahini, honey (or maple syrup), lemon juice, lemon zest, ground cumin, cayenne pepper (if using), and a pinch of salt and pepper. Mix until smooth and creamy. If the mixture is too thick, you can add a small amount of water, a teaspoon at a time, until you reach your desired consistency.

          Assemble the Toasts:

            - Spread a generous layer of the tahini mixture over each slice of toasted bread.

              Add Toppings:

                - Top the tahini toast with thinly sliced cucumber and a sprinkle of pomegranate seeds for a pop of color and sweetness.

                  Garnish:

                    - Finish with a garnish of freshly chopped parsley or mint leaves, and drizzle a bit of olive oil over the top for added flavor.

                      Serve:

                        - Serve immediately as a snack, appetizer, or light meal. Enjoy the crunchy texture and the zesty, nutty flavors!
