500g chicken thighs, boneless and skinless, cut into bite-sized pieces

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce

2 tablespoons fish sauce

3 tablespoons honey

1 tablespoon sriracha (adjust based on heat preference)

1 teaspoon red pepper flakes (optional, for extra heat)

Juice of 1 lime

Fresh cilantro, for garnish

Cooked jasmine rice, for serving

Crushed peanuts, for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, fish sauce, honey, sriracha, lime juice, and red pepper flakes. Mix well, cover, and let marinate in the refrigerator for at least 30 minutes for maximum flavor.

    Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken (reserve the marinade) and stir-fry for about 5-7 minutes until the chicken is cooked through and browned.

      Add Vegetables: Add the sliced bell peppers, onion, garlic, and ginger to the skillet. Stir well and cook for another 3-4 minutes until the vegetables are tender yet crisp.

        Add Remaining Marinade: Pour the reserved marinade into the skillet, bring it to a boil, and let it simmer for 2-3 minutes until it thickens slightly.
