Sweet and Savory Pineapple Chicken and Rice Recipe

1 lb (450g) boneless, skinless chicken thighs

1 cup fresh pineapple chunks (or canned, drained)

1 cup jasmine rice

2 cups chicken broth

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon oyster sauce

1 tablespoon olive oil

1 red bell pepper, diced

1 green bell pepper, diced

1 onion, chopped

2 cloves garlic, minced

1 teaspoon grated ginger

1 teaspoon sesame oil

Salt and pepper to taste

Sliced green onions (for garnish)

Sesame seeds (for garnish)

Prepare the Chicken: Season the chicken thighs with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the chopped onion, bell peppers, garlic, and ginger. Sauté for about 5 minutes until the vegetables are softened.

      Create the Sauce: In a separate bowl, mix together the soy sauce, honey, oyster sauce, and sesame oil. Pour this sauce over the sautéed vegetables and stir well to combine.

        Add Pineapple: Add the pineapple chunks to the skillet and stir gently to mix. Let everything simmer for about 3-4 minutes to allow the flavors to meld.

          Cook the Rice: In a medium saucepan, combine the jasmine rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and cook for about 15 minutes, or until the rice is tender and the broth has been absorbed.

            Combine Chicken and Sauce: Slice the cooked chicken into bite-sized pieces and return it to the skillet with the pineapple and vegetable sauce. Stir everything together and heat through for another 2 minutes.

              Serve: Fluff the rice with a fork and divide it among plates. Spoon the sweet and savory pineapple chicken mixture over the rice. Garnish with sliced green onions and sesame seeds.
