Super Tender Crockpot Beef Short Ribs

4 lbs beef short ribs, trimmed

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional, can substitute with more beef broth)

1 tablespoon Worcestershire sauce

2 tablespoons tomato paste

2 tablespoons brown sugar

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Ribs: Season the short ribs generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the ribs on all sides until browned (about 3-4 minutes per side). Transfer them to the crockpot.

    Sauté Aromatics: In the same skillet, add the diced onion and cook until soft, about 5 minutes. Add garlic and sauté for another minute until fragrant.

      Create the Sauce: Stir in the beef broth, red wine (if using), Worcestershire sauce, tomato paste, brown sugar, thyme, rosemary, and smoked paprika. Bring to a simmer to combine the flavors.

        Combine in Crockpot: Pour the sauce mixture over the seared short ribs in the crockpot. Turn to ensure the ribs are well-coated.

          Slow Cook: Cover and cook on low for 8 hours or on high for 4-5 hours, until the meat is fork-tender and falls off the bone.

            Serve: Once done, remove the short ribs and set them aside. Skim off any excess fat from the sauce. Serve the ribs over mashed potatoes, polenta, or with crusty bread, and drizzle with the rich sauce. Garnish with fresh parsley.
