4 cups kale leaves, stems removed and chopped

2 ripe peaches, sliced

1 cup fresh blueberries

1/2 cup feta cheese, crumbled

1/4 cup walnuts, toasted and roughly chopped

1/4 red onion, thinly sliced

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Prepare the Kale: In a large mixing bowl, add the chopped kale. Drizzle a little olive oil and sprinkle a pinch of salt over the kale. Massage the leaves gently with your hands for about 2-3 minutes until they become tender and dark green.

    Add Fresh Ingredients: To the massaged kale, add the sliced peaches, fresh blueberries, red onion, and toasted walnuts. Gently toss to combine the ingredients while being careful not to crush the fruit.
