4 cups fresh corn kernels (about 6-8 ears of corn)

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

½ cup red onion, finely chopped

1 avocado, diced

¼ cup fresh cilantro, chopped

1 lime, juiced

3 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

Feta cheese, crumbled (optional)

Instructions
 

Start by removing the corn kernels from the cob. You can do this by standing the cob upright in a bowl and carefully slicing the kernels off.

    In a large mixing bowl, combine the fresh corn kernels, cherry tomatoes, bell pepper, red onion, and avocado. Toss gently to combine the ingredients.

      In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.

        Pour the dressing over the corn mixture and add the chopped cilantro. Mix gently until everything is well coated with the dressing.

          Taste the salad and adjust seasoning if necessary. If you like, sprinkle crumbled feta cheese on top for an extra burst of flavor.

            Let the salad sit for at least 15 minutes before serving to allow the flavors to meld. This salad can be served chilled or at room temperature.
