2 large red onions, thinly sliced

2 tablespoons olive oil

1 teaspoon sumac

1 teaspoon sea salt

1 tablespoon red wine vinegar (or lemon juice)

Fresh parsley, chopped (for garnish)

Optional: Pinch of chili flakes for some heat

Instructions
 

In a medium bowl, combine the sliced onions, sea salt, and sumac. Toss to coat the onions evenly with the seasonings.

    Heat the olive oil in a large skillet over medium heat. Add the seasoned onions and sauté for about 5-7 minutes until they become soft and translucent.

      Remove the skillet from the heat and stir in the red wine vinegar (or lemon juice) to brighten the flavor. Optionally, sprinkle chili flakes for a little kick.

        Let the onions cool slightly, then transfer to a serving dish. Garnish with freshly chopped parsley before serving.
