Ingredients

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, pitted and sliced (or substitute with frozen, thawed)

¾ cup granulated sugar (divided)

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup rolled oats

½ cup all-purpose flour

½ cup brown sugar, packed

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, melted

Instructions

Preheat the oven to 350°F (175°C). Grease a baking dish (about 9x13 inches) with cooking spray or butter.

Prepare the fruit mixture: In a large mixing bowl, combine sliced strawberries and peaches. Add ½ cup of granulated sugar, lemon juice, and vanilla extract. Toss until the fruit is well-coated. Pour the mixture into the prepared baking dish and spread it evenly.

Make the crisp topping: In a separate bowl, combine rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt. Stir until well-mixed. Drizzle the melted butter over the oat mixture and stir until the mixture is crumbly.

Assemble the crisp: Evenly sprinkle the oat mixture over the fruit in the baking dish.

Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the fruit is bubbling around the edges.

Cool down: Allow the crisp to cool for about 10 minutes before serving. This can be enjoyed warm or at room temperature.
