Strawberry Mango Popsicles

Beat the heat with these delightful Strawberry Mango Popsicles! Made with fresh strawberries and ripe mango, these popsicles are a refreshing treat perfect for summer. With just a few simple ingredients like coconut water, honey, and lime juice, you can create layers of fruity goodness. Easy to make with kids, these popsicles are not only delicious but also healthier than store-bought options. Freeze for 4-6 hours and enjoy your homemade summer delight!

2 cups fresh strawberries, hulled and sliced

2 cups ripe mango, peeled and cubed

1/2 cup coconut water (or fruit juice of your choice)

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon lime juice

A pinch of salt

Instructions
 

Prepare the Strawberry Mixture: In a blender or food processor, combine the sliced strawberries, lime juice, and honey (or maple syrup). Blend until smooth. Taste, and adjust sweetness if necessary. Pour the mixture into a measuring cup and set aside.

    Prepare the Mango Mixture: Rinse the blender/processor, then add the cubed mango, coconut water, and a pinch of salt. Blend until smooth. Taste and add honey if you like it sweeter.

      Layer the Popsicles: In your popsicle molds, pour about 2-3 tablespoons of the strawberry mixture into each mold, filling it about a quarter full. Gently tap the mold on the counter to remove air bubbles.

        Add Mango Layer: Next, pour the mango mixture over the strawberry layer, filling the molds another quarter full. Tap again to eliminate bubbles.

          Repeat Layers (Optional): If you want more layers, you can alternate pouring layers of strawberry and mango mixtures until the molds are full, leaving a little space at the top for expansion.

            Insert Sticks: Carefully insert popsicle sticks into the molds, making sure they’re centered.

              Freeze: Freeze for at least 4-6 hours, or until solid.

                Unmold & Enjoy: To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out. Enjoy your refreshing Strawberry Mango Popsicles!
