Sticky Honey Garlic Sausage Pasta Skillet

8 oz (225g) penne pasta

1 lb (450g) sweet Italian sausage, sliced into rounds

3 tablespoons olive oil

4 cloves garlic, minced

1/3 cup honey

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 teaspoon red pepper flakes (optional for spice)

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1/2 cup frozen peas

1/4 cup fresh parsley, chopped

Salt and black pepper to taste

Grated Parmesan cheese (for serving, optional)

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil. Add a pinch of salt and penne pasta. Cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced sausage and cook until browned and cooked through, about 6-8 minutes. Remove the sausage from the skillet and set aside.

      Sauté Garlic and Vegetables: In the same skillet, add minced garlic and cook for 1 minute until fragrant. Add diced bell pepper and cook for another 2-3 minutes until slightly softened.

        Create the Sauce: Lower the heat and pour in the honey, soy sauce, apple cider vinegar, and red pepper flakes (if using). Stir to combine well, letting it bubble gently for 2-3 minutes.

          Combine Ingredients: Add the cooked sausage back into the skillet along with halved cherry tomatoes and frozen peas. Stir everything together to coat in the sauce. If the mixture is too thick, use some of the reserved pasta water to loosen it up.

            Add Pasta: Gently fold the cooked pasta into the skillet, ensuring it is well mixed with the sausage and vegetables. Cook for an additional 2-3 minutes, just until heated through.

              Finish and Serve: Stir in freshly chopped parsley, and season with salt and black pepper as desired. Serve warm, topped with grated Parmesan cheese if desired.
