Spring Roll Salad with Spicy Ginger Dressing

Ingredients
  

2 cups mixed salad greens (spinach, arugula, and romaine)

1 cup shredded carrots

1 cup thinly sliced red bell pepper

1 cup cucumber, julienned

1/2 cup fresh cilantro leaves

1/2 cup fresh mint leaves

1 cup cooked vermicelli noodles, cooled

1 tablespoon sesame seeds, toasted

Optional: 1/2 cup cooked shrimp or tofu for protein

For the Spicy Ginger Dressing:

3 tablespoons fresh ginger, grated

2 tablespoons honey or agave syrup

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon chili paste (or more to taste)

Sesame seeds for garnish

Prepare the Salad Base: In a large bowl, combine the mixed salad greens, shredded carrots, sliced red bell pepper, cucumber, cilantro, and mint.

    Add Noodles & Protein: Gently fold in the cooled vermicelli noodles and your choice of cooked shrimp or tofu, ensuring everything is well mixed.

      Make the Spicy Ginger Dressing: In a small bowl, whisk together the grated ginger, honey or agave syrup, soy sauce, rice vinegar, sesame oil, and chili paste. Taste and adjust the spiciness according to your preference.
