Spinach and Feta Quesadillas (20 minutes)

Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper, to taste

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Sour cream and salsa (for serving)

Instructions
 

In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, oregano, and red pepper flakes if using. Remove from heat.

      In a bowl, combine the sautéed spinach mixture with crumbled feta and shredded mozzarella cheese. Mix well to combine.

        Place a tortilla in a clean, dry skillet over medium heat. Spread a generous amount of the spinach and cheese mixture on one half of the tortilla.

          Fold the tortilla in half and cook for about 2-3 minutes on each side, or until the cheese is melted and the tortilla is golden brown. Repeat with remaining tortillas and filling.

            Cut each quesadilla into triangles and serve warm with sour cream and salsa on the side.
