Spicy Turkey Cauliflower Rice

1 pound ground turkey

1 small head of cauliflower (or 4 cups riced cauliflower)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) black beans, drained and rinsed

2 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt and black pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Cauliflower: If using a whole head, remove the leaves and stem from the cauliflower, then cut it into florets. Pulse the florets in a food processor until it resembles rice. Alternatively, use pre-riced cauliflower.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 4-5 minutes. Add minced garlic and cook for another minute until fragrant.

      Brown the Turkey: Increase the heat to medium-high, add the ground turkey, and break it apart with a spatula. Cook thoroughly until the turkey is browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.

        Season the Mixture: Stir in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to evenly coat the turkey and vegetables.
