1 cup cottage cheese

1/2 cup cooked quinoa

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh or frozen)

1 medium tomato, diced

1/4 avocado, sliced

1/4 cup diced red bell pepper

2 green onions, chopped

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro for garnish

Instructions
 

In a large mixing bowl, combine the cottage cheese, cooked quinoa, black beans, and corn.

    Add the diced tomato, avocado, red bell pepper, and green onions to the bowl. Mix gently to combine all the ingredients.
