Ingredients
  

1 pound fresh salmon fillet, skin removed

1 cup breadcrumbs (preferably seasoned)

1/4 cup finely chopped onion

1/4 cup finely chopped bell pepper

2 cloves garlic, minced

2 large eggs, beaten

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon Old Bay seasoning (or your favorite seafood seasoning)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

Vegetable oil, for frying

Lemon wedges, for serving

Instructions
 

Prepare the Salmon: Start by cooking the salmon fillet. You can poach it in simmering water for about 10 minutes or bake it in a preheated oven at 375°F (190°C) for 12-15 minutes, until just cooked through. Let it cool, then flake it into a large bowl, removing any bones.

    Mix Ingredients: Add the breadcrumbs, chopped onion, bell pepper, garlic, eggs, Dijon mustard, Worcestershire sauce, Old Bay seasoning, parsley, salt, and pepper to the bowl with the flaked salmon. Mix until well combined.

      Form Patties: Using your hands, form the mixture into patties, about 2-3 inches in diameter. You should have roughly 8 patties. If the mixture is too wet, add more breadcrumbs to help bind it together.

        Chill Patties: Place the formed patties on a plate and cover with plastic wrap. Refrigerate for at least 30 minutes to help them firm up, which will make frying easier.

          Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. You can test the oil’s readiness by dropping a small piece of the mixture in; it should sizzle.

            Fry the Patties: Carefully place the patties into the hot oil, in batches if necessary to avoid crowding the pan. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy.

              Drain and Serve: Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges on the side for squeezing over the patties.
