1 ½ cups warm water (110°F to 115°F)

2 tablespoons granulated sugar

1 packet (2 ¼ teaspoons) active dry yeast

4 cups all-purpose flour

½ cup unsalted butter, melted

1 teaspoon kosher salt

Baking soda (for boiling solution)

Coarse sea salt (for topping)

For the Cheese Dip:

2 cups shredded sharp cheddar cheese

1 tablespoon all-purpose flour

1 cup milk

1 teaspoon mustard powder

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 tablespoon hot sauce for a kick

Activate the Yeast: In a large bowl, combine warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5 minutes until foamy.

    Make the Dough: In a separate bowl, mix the flour and kosher salt. Gradually add the melted butter to the yeast mixture. Slowly stir in the flour mixture until a dough forms.

      Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Prepare the Boiling Solution: In a large pot, bring 10 cups of water to a boil. Once boiling, add ⅔ cup of baking soda.

          Shape the Pretzels: Preheat the oven to 450°F (230°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches), then shape it into a pretzel by forming a U, crossing the ends, and twisting them before pressing them down onto the base.

            Boil the Pretzels: Carefully place each shaped pretzel into the boiling baking soda solution for about 30 seconds, then remove with a slotted spatula and place them on a greased baking sheet.

              Add Toppings: Sprinkle coarse sea salt on top of each pretzel.

                Bake: Bake the pretzels in the preheated oven for 12-15 minutes or until golden brown.

                  Prepare the Cheese Dip: In a medium saucepan, combine the shredded cheese and flour. Gradually whisk in the milk and cook over medium heat, stirring constantly, until melted and smooth. Add mustard powder, garlic powder, salt, pepper, and hot sauce (if using).
