Ingredients

1 cup unsalted butter, at room temperature

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup whole milk

Zest of 1 lemon (optional for a fresh twist)

Instructions

Prep the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan, or line it with parchment paper for easy removal.

Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 5 minutes.

Add the Eggs and Vanilla: Incorporate the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. If using lemon zest, add it to the dry mixture as well.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the wet mixture, alternating with the milk. Start and end with the dry ingredients. Mix until just combined; do not over-mix.

Pour Batter into Pan: Pour the fluffy batter into the prepared cake pan, smoothing the top with a spatula.

Bake the Cake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely. Serve plain, or dust with powdered sugar, or top with your favorite frosting!
