2 ripe bananas, mashed

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup sugar

1 tsp baking powder

1/2 tsp ground cinnamon

1 large egg

1/2 tsp vanilla extract

1/4 cup milk (or plant-based milk)

Oil for frying (vegetable or coconut oil)

Powdered sugar for dusting (optional)

In a large mixing bowl, combine the mashed bananas, egg, vanilla extract, and milk. Whisk until smooth.

    In a separate bowl, mix the flour, cornmeal, sugar, baking powder, cinnamon, and salt together.

      Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Avoid over-mixing; it’s okay if there are a few lumps.

        Heat about 1/2 inch of oil in a large skillet over medium heat. To check if the oil is ready, drop a small spoonful of batter into the oil; it should sizzle immediately.
