2 cups cooked rice (preferably day-old)

1 lb boneless chicken thighs, diced

1/4 cup soy sauce

2 tablespoons mirin (Japanese sweet rice wine)

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 cup mixed vegetables (peas, carrots, and corn)

2 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 large eggs, beaten

Salt and pepper to taste

Sesame seeds for garnish

Nori strips for garnish

Instructions
 

Marinating the Chicken: In a medium bowl, combine the diced chicken with soy sauce, mirin, and a pinch of salt. Let it marinate for at least 15 minutes.

    Cooking the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and fully cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sautéing Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

        Adding Veggies: Stir in the mixed vegetables and cook for about 3-4 minutes until they're tender and heated through.

          Incorporating Rice: Add the day-old rice to the skillet. Use a spatula to break apart any clumps. Stir-fry for about 5 minutes, letting the rice get slightly crispy.

            Combining Ingredients: Pour the sesame oil over the rice and mix well. Add the cooked chicken back into the skillet; stir to combine all the ingredients.

              Adding Eggs: Push the rice mixture to one side of the pan, and pour the beaten eggs into the cleared space. Scramble the eggs until fully cooked, then mix them into the rice.

                Finishing Touches: Add chopped green onions and stir everything well. Season with additional soy sauce, salt, and pepper to taste. Cook for another 2 minutes.

                  Garnishing: Serve hot, garnished with sesame seeds and nori strips on top for extra flavor and presentation.
