12 oz rigatoni pasta

2 tbsp olive oil

1 lb spicy Italian sausage, casings removed

1 medium yellow onion, diced

2 cloves garlic, minced

1 medium zucchini, diced

1 can (14 oz) diced tomatoes, preferably with juice

1 tsp dried oregano

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain and set the pasta aside.

    Sauté the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the spicy Italian sausage. Break it up with a wooden spoon and cook until browned and cooked through, about 6-8 minutes.

      Add Vegetables: Add the diced onion to the skillet and sauté for 2-3 minutes until it becomes translucent. Then add the minced garlic and zucchini, cooking for an additional 3-4 minutes until the zucchini softens.

        Make the Sauce: Stir in the diced tomatoes (with their juice), dried oregano, and red pepper flakes. Season with salt and pepper to taste. Lower the heat and let the sauce simmer for about 5-7 minutes, allowing the flavors to meld together.

          Combine Pasta and Sauce: Add the drained rigatoni to the skillet, tossing everything together. If the sauce seems too thick, gradually add some reserved pasta water to reach your desired consistency.

            Serve: Plate the rigatoni and garnish with fresh basil and a generous sprinkle of grated Parmesan cheese.
