Ingredients
  

1 cup rhubarb, chopped

1 cup water (for rhubarb syrup)

1 cup sugar (for rhubarb syrup)

1 cup freshly squeezed lemon juice (about 4-5 lemons)

4 cups cold water (for lemonade)

1 lemon, sliced (for garnish)

Fresh mint leaves (for garnish, optional)

Instructions
 

In a medium saucepan, combine the chopped rhubarb, 1 cup of water, and 1 cup of sugar.

    Bring the mixture to a boil over medium heat, stirring occasionally until the sugar dissolves and the rhubarb breaks down, about 5-7 minutes.

      Once cooked, remove from heat and let it steep for about 15 minutes.

        Strain the rhubarb syrup through a fine mesh sieve into a bowl, discarding the solids. Let it cool to room temperature.

          In a large pitcher, combine the cooled rhubarb syrup with 1 cup of freshly squeezed lemon juice and 4 cups of cold water. Stir well to mix.

            Taste the lemonade and adjust the sweetness or tartness by adding more water or lemon juice if desired.

              Serve the lemonade over ice, garnished with lemon slices and fresh mint leaves if using.
