500g boneless chicken thighs, cubed

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust for spice preference)

2 tablespoons vegetable oil

1 medium onion, finely chopped

4 cloves garlic, minced

1-inch ginger, grated

1 can (400g) crushed tomatoes

1 cup heavy cream

2 tablespoons butter

Salt, to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the yogurt, lemon juice, garam masala, turmeric powder, red chili powder, and a pinch of salt. Add the cubed chicken and mix well until coated. Cover and let it marinate in the fridge for at least 30 minutes (or up to overnight for deeper flavor).

    Cook the Chicken: In a large skillet over medium heat, heat the vegetable oil. Add the marinated chicken (discard the excess marinade) and cook for about 5-7 minutes, stirring occasionally until chicken is browned on all sides. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and grated ginger and cook for another 1-2 minutes, until fragrant.

        Create Sauce: Pour in the crushed tomatoes and stir well. Let it simmer for about 5 minutes until slightly thickened.

          Combine: Return the cooked chicken to the skillet. Stir in the heavy cream and butter. Season with salt to taste. Allow it to simmer for another 10 minutes on low heat, until the chicken is cooked through and the sauce is creamy.

            Serve: Garnish with fresh cilantro and serve hot with naan or rice.
