1 cup dried apricots, chopped

1 cup walnuts, roughly chopped

1 cup mixed dried fruit (raisins, currants, or cranberries)

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup brown sugar, packed

1/2 cup honey or maple syrup

2 large eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

Zest of 1 orange

1/4 teaspoon salt

Instructions
 

Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.

    In a medium bowl, combine the chopped apricots, walnuts, and mixed dried fruits. Set aside to allow the flavors to meld.

      In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, brown sugar, and salt until well combined.

        In a separate bowl, whisk together the honey (or maple syrup), eggs, vegetable oil, vanilla extract, and orange zest until smooth.

          Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

            Gently fold in the chopped fruit and nut mixture until evenly distributed throughout the batter.

              Pour the batter into the prepared cake pan and spread it evenly with a spatula.

                Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

                  Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
