1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup pumpkin puree (canned or fresh)

1/2 cup milk (dairy or non-dairy)

2 large eggs

1/4 cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

Optional toppings: maple syrup, whipped cream, pecans, or chocolate chips

Instructions
 

Preheat your waffle iron according to the manufacturer’s instructions.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      In another bowl, mix together the pumpkin puree, milk, eggs, vegetable oil, and vanilla extract until smooth and well blended.

        Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine. If desired, fold in chocolate chips for added sweetness.

          Lightly grease the preheated waffle iron with a small amount of oil or cooking spray.
