Peruvian Grilled Chicken with Creamy Green Sauce

For the Chicken Marinade:

4 boneless, skinless chicken thighs

3 cloves garlic, minced

Juice of 2 limes

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon dried oregano

2 tablespoons olive oil

Salt and pepper to taste

For the Creamy Green Sauce:

1 cup fresh cilantro, tightly packed

1/2 cup mayonnaise

1/4 cup Greek yogurt

1-2 jalapeños (seeds removed for less heat)

Juice of 1 lime

Salt to taste

1-2 tablespoons water (to adjust consistency)

Marinate the Chicken: In a bowl, combine the minced garlic, lime juice, cumin, paprika, oregano, olive oil, salt, and pepper. Add the chicken thighs and coat them well with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Prepare the Creamy Green Sauce: In a food processor, combine the fresh cilantro, mayonnaise, Greek yogurt, jalapeños, lime juice, and salt. Blend until smooth. If the sauce is too thick, add water a tablespoon at a time until desired consistency is reached. Taste and adjust seasoning if necessary. Transfer to a bowl and refrigerate until ready to use.

      Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken thighs for about 7-9 minutes per side or until they reach an internal temperature of 165°F (75°C) and have nice grill marks.

        Serve: Once cooked, remove the chicken from the grill and let it rest for a few minutes. Slice the chicken and drizzle with the creamy green sauce, or serve the sauce on the side for dipping. Enjoy with steamed rice, potatoes, or a fresh salad.
