Ingredients
  

1 cup coarse cornmeal (polenta)

4 cups vegetable or chicken broth

1 cup whole milk (or almond milk for a dairy-free option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

3 tablespoons unsalted butter (or olive oil)

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried)

Salt and pepper, to taste

Optional toppings: sautéed mushrooms, roasted vegetables, fresh herbs

Instructions
 

In a medium saucepan, bring the broth to a gentle boil over medium heat.

    Gradually whisk in the cornmeal, stirring constantly to prevent lumps from forming.

      Lower the heat to a simmer and continue to stir for about 15-20 minutes, until the polenta is thickened and pulls away from the sides of the pan.

        Stir in the whole milk, ensuring a smooth and creamy texture.

          Incorporate the Parmesan cheese, butter, garlic powder, onion powder, rosemary, thyme, salt, and pepper. Stir until all the ingredients are well combined and the polenta is creamy.

            Taste and adjust the seasoning if necessary.

              Remove from the heat and let it sit for a couple of minutes before serving.

                Serve warm, topped with your choice of sautéed mushrooms, roasted vegetables, or a sprinkle of fresh herbs.
