Ingredients

1 loaf of brioche bread, sliced thick (about 8-10 slices)

4 large eggs

2 cups whole milk

1 cup heavy cream

3/4 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup light brown sugar (for topping)

Fresh berries (for serving, optional)

Whipped cream (for serving, optional)

Mint leaves (for garnish, optional)

Instructions

Prepare the Baking Dish: Grease a 9x13 inch baking dish with butter or non-stick spray.

Layer the Bread: Lay the slices of brioche bread in the prepared baking dish, overlapping slightly if needed.

Make the Custard Mixture: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

Combine and Soak: Pour the custard mixture evenly over the brioche slices, ensuring all the bread is soaked. Cover the dish with plastic wrap and refrigerate overnight.

Preheat the Oven: The next morning, preheat your oven to 350°F (175°C).

Bake the French Toast: Remove the dish from the fridge and take off the plastic wrap. Bake in the preheated oven for about 35-40 minutes, until the top is golden brown and the custard is set.

Caramelize the Top: Once the French toast is done, evenly sprinkle the light brown sugar over the top. Use a kitchen torch to caramelize the sugar until it becomes golden and crispy. (Alternatively, you can broil it in the oven; just watch it closely to avoid burning.)

Serve: Let the French toast cool for a few minutes, then cut into squares. Serve warm, topped with fresh berries, a dollop of whipped cream, and garnished with mint leaves if desired.
