Ingredients

4 cups mixed greens (spinach, arugula, and romaine)

2 large oranges, peeled and segmented

1 cup mandarin oranges, drained

½ cup crumbled feta cheese

¼ cup sliced almonds, toasted

½ cup Greek yogurt

2 tablespoons honey

1 teaspoon vanilla extract

1 tablespoon fresh orange juice

Salt and pepper to taste

Instructions

Prepare the Dressing: In a small bowl, combine the Greek yogurt, honey, vanilla extract, and fresh orange juice. Whisk until smooth and creamy. Season with a pinch of salt and pepper to taste. Adjust sweetness by adding more honey if desired.

Mix the Salad Base: In a large salad bowl, combine the mixed greens, orange segments, and mandarin oranges. Toss gently to distribute the fruit evenly among the greens.

Add Cheese and Nuts: Sprinkle the crumbled feta cheese and toasted almonds over the salad mixture.

Dress the Salad: Drizzle the prepared yogurt dressing over the salad. Use tongs or two large spoons to gently toss the salad, ensuring everything is well-coated without bruising the greens.

Serve: Transfer the salad to individual plates or serve family-style in the large bowl. Garnish with a few extra almonds and a sprinkle of feta if desired.
