One Skillet Salmon with Lemon Orzo

Ingredients
  

4 salmon fillets (skin-on or skinless, about 6 oz each)

1 cup orzo pasta

2 tablespoons olive oil

3 garlic cloves, minced

1 medium onion, diced

1 lemon (zested and juiced)

3 cups vegetable or chicken broth

1 cup cherry tomatoes, halved

1 cup spinach leaves, fresh

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

    Add Broth and Orzo: Pour the vegetable or chicken broth into the skillet and bring to a boil. Add the orzo pasta and let it simmer for about 8 minutes, stirring occasionally, until al dente.

      Season the Salmon: While the orzo is cooking, season the salmon fillets with salt, pepper, oregano, and basil.

        Cook the Salmon: In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat. Add the salmon fillets, skin-side down if applicable. Cook for 4-5 minutes on each side, or until golden brown and cooked through. Drizzle with lemon juice and zest during the last minute of cooking for extra flavor.

          Add Vegetables: Once the orzo is cooked, stir in the halved cherry tomatoes and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes are slightly softened.

            Combine and Serve: Gently place the cooked salmon fillets on top of the orzo mixture in the skillet. Garnish with fresh parsley and additional lemon wedges if desired. Serve warm for a delicious and vibrant meal!
