1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon olive oil

1 small onion, diced

2 garlic cloves, minced

4 cups low-sodium chicken broth

1 lb (450g) potato gnocchi

1 cup heavy cream

Zest and juice of 1 large lemon

1 teaspoon dried thyme

Salt and pepper to taste

2 cups baby spinach

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent.

    Add the minced garlic and cook for an additional minute until fragrant.

      Introduce the chicken thighs to the pot, seasoning with salt, pepper, and dried thyme. Sauté until the chicken is browned all over, about 5-7 minutes.

        Pour in the chicken broth and bring to a simmer. Once simmering, add the potato gnocchi.

          Cook the gnocchi according to package instructions, typically around 2-3 minutes, or until they float to the top.

            Stir in the heavy cream, lemon zest, and lemon juice, mixing well to combine. Allow to simmer for another 2-3 minutes, thickening slightly.

              Add in the baby spinach and stir until just wilted.

                Remove from heat and stir in the grated Parmesan cheese until melted and integrated.
