One Pot Creamy Italian Ground Chicken Soup

Ingredients
  

1 lb ground chicken

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried Italian herbs (oregano, basil, thyme mix)

1 teaspoon salt

½ teaspoon pepper

6 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup uncooked small pasta (like ditalini or orzo)

1 cup heavy cream

1 cup fresh spinach, chopped

½ cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.

    Brown the Chicken: Add the ground chicken to the pot. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

      Add Vegetables & Seasonings: Mix in the carrots, celery, dried Italian herbs, salt, and pepper. Let cook for another 3-4 minutes to soften the veggies.

        Pour in Broth & Tomatoes: Pour in the chicken broth and diced tomatoes (with their juices). Stir well to combine and bring to a simmer.

          Cook the Pasta: Add the uncooked pasta to the simmering soup. Cook according to the pasta package instructions, usually about 8-10 minutes, stirring occasionally.

            Stir in Cream & Spinach: Once the pasta is cooked, reduce the heat to low. Stir in the heavy cream and chopped spinach, allowing the spinach to wilt for about 2-3 minutes.

              Finish with Cheese: Remove the pot from heat. Stir in the grated Parmesan cheese until it melts and combines well with the soup. Adjust seasoning if necessary.

                Serve: Ladle the soup into bowls, and garnish with fresh basil leaves and additional Parmesan cheese if desired.
