4 boneless, skinless chicken thighs

1 cup Arborio rice

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare Chicken: Season the chicken thighs with salt, pepper, and Italian seasoning on both sides.

    Brown the Chicken: In a large skillet or deep pan, heat the olive oil over medium-high heat. Add the chicken thighs, cooking for about 4-5 minutes per side or until browned. Remove the chicken from the pan and set aside.

      Sauté Veggies: In the same pan, add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Toast Rice: Stir in the Arborio rice, allowing it to toast for about 1-2 minutes, stirring constantly.

          Add Liquid: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.

            Return Chicken: Place the browned chicken thighs back into the pan, nestling them into the rice. Reduce the heat to low, cover the pan, and let it simmer for about 20 minutes or until the rice is tender and has absorbed most of the liquid.
