2 cups sharp cheddar cheese, grated

1 cup cream cheese, softened

1/2 cup mayonnaise

1/2 cup roasted red pimentos, drained and chopped

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon cayenne pepper (adjust for heat)

Salt and black pepper to taste

Fresh chives or parsley, chopped (for garnish, optional)

Instructions
 

In a large mixing bowl, combine the grated sharp cheddar cheese and softened cream cheese. Use a spatula or hand mixer to blend them until smooth and creamy.

    Add the mayonnaise, chopped roasted red pimentos, Dijon mustard, garlic powder, onion powder, and cayenne pepper. Mix until all ingredients are evenly incorporated and the mixture is creamy.

      Taste the mixture and add salt and black pepper as needed. Adjust the seasoning according to your preference.

        Once well mixed, transfer the pimento cheese to an airtight container. It can be served immediately, but for best flavor, refrigerate for at least 2 hours to allow the flavors to meld.

          When ready to serve, scoop the pimento cheese into a serving bowl and garnish with chopped chives or parsley if desired. Serve with crackers, toasted bread, or fresh vegetables.
