Ingredients
  

1 can (20 oz) crushed pineapple in juice, drained

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

2 cups whipped topping (thawed)

1 cup graham cracker crumbs

½ cup unsweetened shredded coconut (optional)

Maraschino cherries and pineapple slices for garnish

Instructions
 

In a large mixing bowl, beat the softened cream cheese until smooth.

    Gradually add the powdered sugar and continue to beat until well combined.

      Stir in the vanilla extract and crushed pineapple until evenly mixed.

        Gently fold in the whipped topping until no streaks remain, creating a light and fluffy mixture.

          In a separate bowl, combine graham cracker crumbs and shredded coconut (if using).

            In a 9x9-inch dish, layer half of the graham cracker mixture on the bottom.

              Spread half of the pineapple cream mixture over the graham cracker layer.

                Repeat the layers, finishing with the pineapple cream on top.

                  Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.

                    Before serving, garnish with maraschino cherries and pineapple slices on top.
