4 large eggs

1/4 cup fresh mozzarella cheese, diced

2 tablespoons fresh basil, chopped (or 1 tablespoon dried basil)

1 tablespoon olive oil or butter

Salt and pepper to taste

1/4 cup cherry tomatoes, halved (optional)

A pinch of red pepper flakes (optional for a kick)

Instructions
 

In a medium bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Season with salt and pepper to taste. For added flavor, you can mix in the red pepper flakes if using.

    Heat the olive oil or butter in a non-stick skillet over medium heat until hot.

      Pour the beaten eggs into the skillet, swirling to ensure they cover the bottom evenly. Let them cook undisturbed for about 1-2 minutes or until the edges begin to set.

        Gently lift the edges of the omelet with a spatula, allowing the uncooked eggs to flow underneath. Continue this process until the top is just set but still slightly runny.

          Evenly distribute the diced mozzarella and chopped basil over one half of the omelet. If using cherry tomatoes, add them as well.

            Carefully fold the other half of the omelet over the filling. Continue to cook for another minute until the cheese begins to melt and the omelet is cooked through to your liking.

              Slide the omelet onto a plate and serve hot, garnished with extra basil or a sprinkle of cheese if desired.
