4 cups green cabbage, shredded

1 cup carrots, shredded

1 cup corn (fresh, frozen, or canned)

½ cup red onion, finely chopped

½ cup cilantro, chopped

1 jalapeño, finely minced (remove seeds for less heat)

1 cup mayonnaise

1 lime, juiced

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

Crumbled feta or cotija cheese for garnish

Extra lime wedges for serving

In a large mixing bowl, combine the shredded green cabbage, shredded carrots, corn, red onion, cilantro, and minced jalapeño. Toss to mix evenly.
