Mediterranean Lemon Chicken with Artichokes & Olives

4 boneless, skinless chicken breasts

1 cup marinated artichoke hearts, drained and halved

1 cup Kalamata olives, pitted and halved

3 tablespoons olive oil

Juice and zest of 2 large lemons

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped, for garnish

Marinate the Chicken: In a bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Whisk well to combine. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for maximum flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Prepare the Baking Dish: In a large baking dish, spread the marinated artichokes and olives evenly.

        Add the Chicken: Remove the chicken from the marinade, allowing any excess marinade to drip off. Place the chicken breasts on top of the artichokes and olives in the baking dish.
