Ingredients

1 pound ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs (Italian seasoned preferred)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon onion powder

1 jar (about 24 oz) marinara sauce (store-bought or homemade)

4 hoagie rolls

8 slices provolone cheese

Olive oil for frying

Optional: crushed red pepper flakes for added heat

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Mix the Meatball Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, pepper, and onion powder. Mix until just combined; avoid over-mixing to keep the meatballs tender.

Form the Meatballs: Roll the mixture into meatballs about 1.5 inches in diameter and place them on a baking sheet lined with parchment paper.

Brown the Meatballs: Heat a skillet over medium-high heat and add olive oil. Once hot, add meatballs in batches (do not overcrowd) and brown them on all sides. This should take about 5-7 minutes. They do not need to be fully cooked at this stage, as they will finish cooking in the oven.

Simmer in Marinara Sauce: Pour the marinara sauce into the skillet (after removing excess grease) and gently add the browned meatballs back into the sauce. Let them simmer for 10 minutes on low heat.

Prepare the Hoagie Rolls: While the meatballs simmer, slice the hoagie rolls in half lengthwise and place them on a baking sheet.

Assemble the Subs: Spoon the meatballs and sauce onto the hoagie rolls, ensuring each roll gets a hearty portion. Top each sub with 2 slices of provolone cheese.

Bake: Place the assembled subs in the preheated oven and bake for 10-15 minutes or until the cheese is melted and bubbly and the rolls are lightly toasted.

Serve: Carefully remove from the oven, let cool for a moment, and optional: sprinkle with crushed red pepper flakes for added heat. Serve hot and enjoy the deliciously messy goodness of your meatball sub!
