Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 cup heavy cream

1 cup chicken broth

1 cup sun-dried tomatoes, chopped

1 cup spinach leaves, packed

½ cup grated Parmesan cheese

8 ounces penne pasta

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions. Drain and set aside.

Season the Chicken: Pat the chicken breasts dry and season both sides with salt and pepper.

Sear the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Prepare the Sauce: In the same skillet, add the minced garlic and dried Italian herbs. Sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine.

Add Flavors: Stir in the sun-dried tomatoes and allow the sauce to simmer for about 5 minutes, letting it thicken slightly. Then add the spinach and cook until wilted.

Cheese It Up: Add the grated Parmesan cheese, stirring until melted and smoothly combined. If the sauce is too thick, you can thin it out with a little extra chicken broth.

Combine: Slice the cooked chicken and return it to the skillet with the creamy sauce. Then, add the cooked penne pasta and toss everything together until well coated.

Serve: Divide the Marry Me Chicken Pasta among plates, garnishing with fresh basil leaves. Enjoy your dish that’s sure to impress!
