2 lbs flank steak (or skirt steak)

3 tablespoons olive oil

1 tablespoon chipotle powder

1 tablespoon smoked paprika

2 teaspoons ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 2 limes

4 cloves garlic, minced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a small bowl, whisk together the olive oil, chipotle powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, black pepper, and lime juice. This will be the marinade.

    Place the flank steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, making sure it is well coated. If using a bag, squeeze out excess air and seal it. If using a dish, cover it securely with plastic wrap.

      Let the steak marinate in the refrigerator for at least 1 hour, preferably overnight for the best flavor.

        Preheat your grill or grill pan over high heat. Remove the steak from the marinade, letting excess marinade drip off.

          Grill the steak for about 6-8 minutes on each side for medium-rare, or until your desired doneness. Allow it to rest for 5 minutes before slicing.

            Slice the steak against the grain into thin strips.

              Garnish with freshly chopped cilantro and serve with lime wedges on the side.
