8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup fresh spinach, roughly chopped

1 lemon (zested and juiced)

1/2 cup cherry tomatoes, halved

1/4 cup olive oil

1/2 tsp red pepper flakes (optional)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1 minute). Add the shrimp, seasoning them with salt and black pepper. Cook until the shrimp are pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set them aside.

      Combine Ingredients: In the same skillet, add the cherry tomatoes and sauté for about 2-3 minutes. Then add the cooked spinach and cook until it has wilted.

        Mix Pasta and Sauce: Return the shrimp to the skillet. Add the cooked pasta along with the lemon juice, lemon zest, and a bit of the reserved pasta water. Toss everything together over low heat until the pasta is well coated. Adjust seasoning with salt and pepper as needed.
