For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/4 cup cooked jasmine rice

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons Sriracha (adjust to taste)

1 tablespoon lemon juice

Pinch of salt

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Meatball Mixture: In a large mixing bowl, combine the ground beef, cooked jasmine rice, green onions, minced garlic, grated ginger, soy sauce, sesame oil, sugar, black pepper, and red pepper flakes. Mix until just combined to avoid overworking the meat.

      Shape Meatballs: Using your hands, form the mixture into meatballs about 1 inch in diameter and place them on the prepared baking sheet, leaving space between each one.

        Bake Meatballs: Bake in the preheated oven for 15-20 minutes or until the meatballs are cooked through and browned on top.

          Make Spicy Mayo Dip: While the meatballs are baking, in a small bowl, whisk together the mayonnaise, Sriracha, lemon juice, and salt until smooth. Adjust the Sriracha according to your heat preference.
