8 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

2 tablespoons coconut oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 teaspoon fresh thyme leaves

1 teaspoon allspice

1 teaspoon cayenne pepper (adjust to taste)

1 cup coconut milk

½ cup heavy cream

1 cup cherry tomatoes, halved

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Cook Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or linguine, and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

    Sauté Shrimp: In a large skillet, heat coconut oil over medium-high heat. Add the shrimp and cook for 2-3 minutes, or until they turn pink and are just cooked through. Remove shrimp from the skillet and set aside.

      Sauté Vegetables: In the same skillet, reduce heat to medium. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until they soften, then add minced garlic. Sauté for an additional minute until fragrant.

        Seasoning: Stir in the thyme, allspice, and cayenne pepper. Cook for another minute to combine flavors.

          Create Sauce: Pour in the coconut milk and heavy cream, stirring well to combine. Bring the sauce to a simmer, allowing it to thicken slightly for about 4-5 minutes. If it becomes too thick, add some of the reserved pasta water.

            Combine Pasta & Shrimp: Add the cooked pasta and shrimp back into the skillet, tossing everything together to ensure the pasta is coated with the creamy sauce. Add the halved cherry tomatoes, stirring gently. Cook for an additional 2-3 minutes.

              Final Touches: Season with salt and pepper to taste.
